Cod with lemon and fresh herbs

4 fillets of fish, approximately 200g each
2 tblspn fresh lemon juice
2 tblspn mixed fresh herbs, finely chopped (mixture to your preference: thyme, marjoram, dill, basil, rosemary, oregano)
1 clove garlic, crushed Salt and pepper to taste

Method

Sprinkle fish with herbs, lemon and garlic. Leave for 30 minutes.
Season fish with salt and pepper to taste.
Grill for approximately 5 minutes, depending on thickness of fish.
Turn once only, grill second side until done, approximately another 5 minutes.

This versatile fish fillet recipe can be served with artichoke, onion and olive salad (as picture) or your own favourite salad. It can also be served with fresh tomato salsa (as in pan fried fish recipe) or cooked with tomato and chilli sauce (as in seafood sauce recipe).
