2 raw lobster
Large pot
Bowl of iced water (after cooking)

Method:
Bring water to boil in large pot and add salt.
Put raw lobster in and when they come to the boil, place lid on and cook for 18 minutes.
Once cooked, plunge into iced water to stop cooking process.
Alternatively:
Split and clean the raw lobster
Place in a dish and sprinkle with olive oil, salt, garlic, basil and white wine and marinate for a few minutes.
Sprinke olive oil onto hot BBQ plate.
Remove marinated lobster and retain marinade. Place lobster on BBQ plate, skin side down. Cook for a couple of minutes.
Flip over onto shell side and fill each shell with retained marinade.
Close BBQ lid (or cover with alfoil) to keep moist while cooking.
(Finish on the open grill if required and add a little more wine to keep moist).
When cooked, dress with the cocktail sauce, a squeeze of lemon juice, a little virgin olive oil and cracked pepper.
Meanwhile - for the whole lobster, make the cocktail sauce by mixing together
1 part mayonnaise
1 part tomato ketchup
Tabasco sauce (few drops)
Worcester sauce (few drops)
Brandy (few drops)
(Adjust incredients to personal taste)
Then: Remove meat from shell of whole cooked lobster, slice and replace in shell.
Pour cocktail sauce over the lobster.
Dress platter with tomato and burpless cucumber, and serve with crusty bread.
Tip: Serve MadFish Semillion Sauvignon Blanc wine which complements the flavours prefectly.
