Mandurah Blue Swimmer (Chilli) Crabs

6 cooked Crabs
Wok & a gas ring
Wok Ladle

1 brown onion finely chopped
1 yellow capsicum cut into strips
1 red capsicum cut into strips
2 cloves crushed garlic
1 bunch spring onions, sliced on the cross
1/2 cup lemon juice
1/2 cup dry MadFish white wine
Oyster sauce
Kepmanis sweet soy sauce
Sweet chilli sauce
Sesame oil (fragrant)

Method:

Remove meat from crab shells and slice.

Heat wok and add olive oil, sesame oil and finely chopped onion.
Add fresh garlic, yellow and red capsicum strips and the spring onion and mix well.  Cover and cook gently for a couple of minutes.
Stir in sweet chilli sauce, Kepmanis sweet soy sauce and a little oyster sauce.
Add white wine and the juice of three lemons. 
Mix well and cook for approximately 15 minutes until the sauce thickens and reduces.

Pour the mixture over the crab meat.

Dress with lemon and sliced spring onion.

Tip:  Serve MadFish Premium White wine which complements the flavour perfectly.
