Whiting Fillets with cucumber and tarragon sauce

500g King George or silver whiting fillets
2 spring onions, finely sliced. Separate white from green.
1 tspn dill, finely chopped
1/2 cup white wine (or juice of 1/2 a lemon and water)
1 tblspn butter or olive oil
1 cucumber, peeled, seeded and diced
1 tblspn tarragon, chopped
7 tblspn plain yogurt
Salt and pepper to taste

Method

In a pan soften green part of spring onions in oil. Add cucumber and tarragon.
Simmer for 10 minutes. Cool and puree coarsely.
Stir in yoghurt, season with salt and pepper to taste.
Place fillets, white part of spring onions and dill in microwave dish.
Pour wine over and sprinkle with salt and pepper.
Cover with plastic wrap and microwave on medium high for 5 minutes.
Serve with cucumber and tarragon sauce.

Serves 2-3

Cooking Tips and Alternatives

Form a star shaped pattern putting thin end of fish in centre for even cooking.
