Tips
- Oil 180 degrees – Olive oil, can use mix of oil and butter.
- Dust with flour immediately prior to cooking
- To use breadcrumbs: flour first, and then dip in beaten egg and finally the breadcrumbs.
- Liven up your bread crumbs with herbs like parsley, lemon thyme, or desiccatted coconut
Suggested Species:
Finfish: Snapper, Western Australian Dhufish, Pearl Perch, Goldband Snapper, Saddletail Snapper, Bluespotted Emperor or any medium to firm fish. Avoid oily fish.Other species: Prawns, Scallops, Lobster, and Abalone.
