Packed full of flavour – the combinations of lemon myrtle, smoked sea salt and clementine juice give perfect balance to the sweet, juicy scallops. Ingredients
6 Rottnest Island Scallops
Half New Season Imperial Mandarin
Olive Oil
White pepper
Smoked sea salt
Fresh Lemon myrtle
Clementine juice
Method
Slice scallop and mandarin finely
Marinate with olive oil, pepper and clementine juice
Return to shell
Finish with smoked sea salt and fresh lemon myrtle
