A vision to deepen connections with Western Australia’s remarkable seafood heritage, celebrate sustainable fishing practices, and build a genuine community of seafood lovers has inspired the launch of WA’s newest premium dining series, The Captain’s Table.
Showcasing some of Western Australia’s most sought-after and responsibly sourced seafood, The Captain’s Table brings together acclaimed chefs, exceptional venues, and extraordinary seafood experiences that honour the journey from ocean to plate.
Each event offers a unique multi-course menu crafted by a leading chef, with every dish designed to highlight the provenance, quality and versatility of WA’s signature local seafood species. Featured products include West Australian Crystal Crab, Shark Bay Vongole, Shark Bay Blue Swimmer Crab and Buccaneer Mackerel, all wild-caught and sustainably harvested by experienced Western Australian fishers.
The initiative is the brainchild of Samuel Bass, founding director of award-winning company Aquatic Life Industries, the parent company of Southern Trading Australia. Created with a vision to strengthen the connection between Western Australian diners and the people, places and practices behind some of the state’s finest seafood.
Southern Trading Australia CEO, Steven Davies, said today’s consumers are increasingly interested in understanding where their seafood comes from, how it is harvested, and the standards that underpin its sustainability.
“By partnering with some of WA’s most respected chefs, we’re creating opportunities to share the stories behind responsibly sourced seafood and showcase the provenance of the exceptional products they are working with,” Mr Davies said.
“Through The Captain’s Table, we aim to elevate the seafood dining experience while highlighting the diversity, quality and sustainability of Western Australian seafood. We want guests to enjoy not only an outstanding meal, but also a deeper understanding of the journey each product takes from ocean to plate.”
Unlike a traditional dining event, The Captain’s Table gives each participating chef complete creative freedom to design a one-of-a-kind menu built around premium WA seafood. The result is an exclusive dining experience that reflects the chef’s individual style while celebrating the natural qualities of each sustainably sourced product.
By bringing provenance to the forefront, the series aligns with growing consumer demand for transparency, responsible sourcing and authentic food experiences, while supporting the industry’s commitment to sustainability and traceability.
Samuel Bass said the goal of the series is to inspire greater appreciation and understanding of local seafood, encourage consumers to explore new species and experiences, and build a passionate community of seafood lovers who follow the series from restaurant to restaurant.
“We’ll be working with chefs across a range of venues to create a diverse calendar of experiences, ensuring every event offers diners something unique while highlighting the remarkable breadth of Western Australian seafood,” Mr Bass said.
Every Captain’s Table menu features signature seafood products, thoughtfully sourced from the pristine waters of Western Australia and selected for their outstanding quality, sustainability credentials and exceptional flavour.
The debut event, held at the award-winning Madalena’s Bar in South Fremantle, sold out within just four hours, reflecting strong demand for premium seafood experiences that combine culinary excellence with authentic provenance stories.
The next event will be held at Pearla & Co on 8 October 2026, where renowned Head Chef, Scott Bridger, will create a one-night-only menu celebrating West Australian Crystal Crab and showcasing the provenance and sustainability of each featured ingredient.
